If you were to pick a scene in As You Like It to audition people for the part of Jaques, what would you pick? I kind of want to avoid his big monologues ("All the world's a stage" especially).

I haven't seen the audition rules, so I don't know if that is limited to plays.
For lamentation, there's Sebastian's confession from "Comes the Inquisitor", Londo's silliloquy [sic] from "In the Beginning" (both B5).
For nihilism, there's the opening monologue from "Trainspotting" or any monologue from "Fight Club".

Act 2 scene 7, one of the parts where he's talking about meeting Touchstone! It's a weird moment, but it ought to show off Jaques both excited enough to use exclamation marks and still being "the melancholy Jaques."
